Seared Cod and Fresh Herb Sauce

 

Let’s hear it for the cod fish! Not only is cod one of our favorite fishes, but it is rich in Omega-3s, helps your cardiovascular muscles, helps heart disease and is the most eco-friendly fish to eat (next to salmon)! Combine this fabulous fish with our Bikini Approved herb sauce and you’ve got yourself a tasty dish. Enjoy our seared cod and fresh herb sauce recipe with the whole family!

 

 

 

 

 

 

Ingredients (Serves 4)

  • 4 eco-friendly cod filets

  • 1 tbsp. chives, minced

  • 1 tbsp. fresh parsley, minced

  • 1 tbsp. fresh thyme

  • 2 garlic cloves, minced

  • 1 shallot, minced

  • The zest of half an organic lemon

  • 6 tbsp. extra virgin olive oil

  • Freshly ground black pepper

 

Directions

  1. Preheat your oven to 400 F. Season each filet with as much black pepper as desired for taste

  2. In a bowl, combine the EVOO, garlic, shallot, and herbs.

  3. Preheat a skillet over a medium-high heat.

  4. Pour the herb oil over the skillet and sear the fish filets on both sides (about 2 minutes per side).

  5. Transfer the fish to a baking sheet and cook in the oven for 7 minutes. Don’t discard the skillet.

  6. Pour the the lemon zest in the skillet that was used to sear the fish and bring to a simmer: make sure to scrape the bottom of the pan to get the browned bits into the sauce.

  7. Serve the fish with the sauce and lemon or lime wedges on the side. Enjoy!
