Let’s hear it for the cod fish! Not only is cod one of our favorite fishes, but it is rich in Omega-3s, helps your cardiovascular muscles, helps heart disease and is the most eco-friendly fish to eat (next to salmon)! Combine this fabulous fish with our Bikini Approved herb sauce and you’ve got yourself a tasty dish. Enjoy our seared cod and fresh herb sauce recipe with the whole family!
Ingredients (Serves 4)

4 eco-friendly cod filets

1 tbsp. chives, minced

1 tbsp. fresh parsley, minced
-
1 tbsp. fresh thyme
-
2 garlic cloves, minced
-
1 shallot, minced
-
The zest of half an organic lemon
-
6 tbsp. extra virgin olive oil

Freshly ground black pepper
Directions

Preheat your oven to 400 F. Season each filet with as much black pepper as desired for taste

In a bowl, combine the EVOO, garlic, shallot, and herbs.

Preheat a skillet over a medium-high heat.

Pour the herb oil over the skillet and sear the fish filets on both sides (about 2 minutes per side).

Transfer the fish to a baking sheet and cook in the oven for 7 minutes. Don’t discard the skillet.

Pour the the lemon zest in the skillet that was used to sear the fish and bring to a simmer: make sure to scrape the bottom of the pan to get the browned bits into the sauce.
- Serve the fish with the sauce and lemon or lime wedges on the side. Enjoy!
