Sauteed Zucchini and Mushrooms

Whether you’re a strict vegetarian or looking for a hearty side of vegetables alongside your steak, we created an all veggie entree that’s safe to eat during the Bikini Cleanse. This recipe includes tasty mushrooms, zucchini, and chili peppers and contains over 10 grams of vegetable protein. The mushrooms work to help boost your immune system and are packed with antioxidants. Zucchinis, also filled with vitamins and minerals, help to keep you skinny as they’re mostly made of water. The chilies add a bit of flavor while boosting your metabolism for an extra kick. Our sauteed zucchini and mushrooms recipe is sure to be your new skinny staple meal on or off the Bikini Cleanse!

 

 

 

 

 

Ingredients

  • 3-4 tablespoons extra virgin olive oil

  • ½ lb. of organic mushrooms, quartered

  • 1 tsp. freshly cracked pepper

  • 4 green, organic onions, chopped

  • 3 garlic cloves, minced

  • 2 lbs. of organic zucchinis (about 5-6), cut in half-moons

  • 1/4 cup fresh parsley, chopped

  • 3 dried chili peppers

 

Directions

  1. Melt the EVOO in a heavy skillet set over high heat. Add the mushrooms, sprinkle with pepper and cook until golden brown on all sides.

  2. Place in a bowl, lower heat to medium, add the green onions and garlic and cook for about 2-3 minutes or until browned and softened.

  3. Return mushrooms to the skillet, add parsley and peppers, stir to combine and serve!
