Egg White and Veggie Omelette

Ingredients

  • 4-5 free-range egg whites

  • 1 free-range egg yolk

  • 2 tbs. of almond milk or soy milk

  • ½ organic tomato

  • 1 cup of shredded, organic spinach

  • 1 tbs. organic, purple onion

  • 1 pinch of basil

  • 1 clove of garlic

  • 1 tbs. of extra virgin olive oil

 

Directions

1. Chop the vegetables

2. Beat the egg whites, the yolk and the almond/soy milk

3. Add ½ tbs. of EVOO to sautee pan and warm for 45 seconds over medium heat; quick sauté the tomato, spinach, onion, basil, and garlic just until soft

4. Put the vegetables on the side, add the second ½ tbs. of EVOO, put medium-low heat and pour the eggs. Cook until the eggs are firm and add the vegetables on one side and fold the other half over top.

5. Garnish with diced tomatoes and serve!
